Breakfast recipe – WAKE UP with oven-baked hash browns

We all know the feeling. You wake up on a weekend morning, and nothing can possibly tear you away from the deliciously dreamy, cotton-cocoon that embraces you. But what if there was something more delicious that could entice you to throw off the sheets and start your day right?

A mouth-watering breakfast can be all it takes to kick-start your morning and get you out of the bedroom and into the kitchen.

One go-to recipe for me is a rustic take on a frozen favourite – the modest hash brown. This recipe from Hungry Healthy Happy not only gives you a delicious and filling start to the day, it also offers tips for giving little flavour twists and cutting down the calories.

 

INGREDIENTS NEEDED TO MAKE HUNGRY HEALTHY HAPPY’S OVEN BAKED HASH BROWNS (SERVES 4)

  • 2 medium potatoes

  • 1 medium onion

  • 2 medium eggs

  • A pinch of sea salt and black pepper

  • ½ tsp garlic powder

 

GET STARTED

One: Grate the potato and onion on the large side of a box grater.

Two: Put the grated potato and onion at the centre of a kitchen towel and squeeze out the excess liquid.

Three: Put the mixture into a bowl and add the egg and a little salt and pepper and garlic and combine.

Four: Lightly grease a baking tray and get handfuls of the mixture and shape in to circles. Put them on the tray and gently flatten – the mixture should make 8 hash browns.

Five: Bake at 200°C/400°F for 15 minutes. Flip them over, pat them down and then cook for a further 20 minutes until they are crispy.

Once baked, my favourite serving tip is to top them with a poached egg – the creamy yolk is a perfect natural sauce to mop up – yum! Wash down with a fresh cup of coffee and freshly-squeezed orange juice, and you’ll be set to face whatever the day throws at you.
